Healthy Salsa con Queso!

You will need: 

  • some sort of healthy tortilla, whole grain preferably
  • 2 packages of skinny cow light swiss cheese
  • Salsa of your choice
  • A toaster oven or normal oven
  • a microwave
  • salt
  • olive oil
  1. Cut a healthy whole grain tortilla into chip shapes
  2. Put olive oil into a baking pan and place each chip on it
  3. Flip chips so both sides are covered in olive oil
  4. Salt lightly
  5. Bake at 350 degrees until chips begin to harden and sizzle
  6. Flip and watch for a slight brown tint
  7. Pull them out and let cool
  8. Now take the two packages of skinny cow cheese and place in bowl
  9. heat in the microwave for 20 seconds each time until the cheese is softened
  10. Add 2-3 spoonfuls of salsa
  11. Continue to heat for 20 second intervals until the mixture has no more lumps 
  12. If you want, lightly salt chips again, then serve and enjoy!

I just thought of all of you fitblrs when I saw this shopping in the store the other day!
My mom made this lovely half greek yogurt half mayo chicken salald and it tastes so amazing! I put tomatoes on it and had hummus, crackers, and blueberries on the side!
I’m trying to remember exactly what I put in it but it has chicken and eggplant that was roasted i think with a bit of hummus! On a whole grain wrap (as always!)
Not gonna lie my mom made this but yum! Blueberry sauce over fresh cod and baked eggplant slices!
This was actually really good. Its a salad with just granola and cottage cheese!
